Alliin
Aliin is a sulfoxide found in garlic. It is a derivate of the amino acid cysteine. When the garlic is chopped or crushed the enzyme allinase converts alliin into allicin, which is responsible for the aroma of fresh garlic.It is most often used for therapeutic treatment of different disorders related to oxigen toxicity. After considerable research was carried out garlic was found to have potent antioxidative and radical scavanging properties. This can be attributed t the aliin.
