Chitosan (pronounced "kite-o-san") is a linear polysaccharide composed of D-glucosamine and N-acetyl-D-glucosamine. Chitosan is commonly derived from the shells of shrimp and other sea crustaceans, and is water soluble. Chitosan is not digestible, and thus has no calories. It is suggested that chitosan can interact with lipids (fat) from the digestive system and bind to fats and cholesterol - encapsulating them before they can be absorbed by the body.*
